]]>#EncoFamily, did you know you can trace an image on your cake with our Enco meringue frosting? Here we tell you how to do it, step by step.
You definitely want to learn how to do this. After all, being able to trace any drawing you want in your cake can further expand your cake decoration skills. The best part is, all you need is our meringue frosting, food coloring gels and some piping tips. Ready? Let’s begin!
1. First print the drawing or design you want to trace on a piece of paper. Then, place some parchment paper on top of it and begin outlining the design with Super Black frosting and the #2 piping tip.
2. Once finished, take your trace and place it on top of your cake. Press it lightly on the outline to copy the design. Do it slowly to avoid the frosting sticking on your paper and ruining your smooth edges.
3. Once the outline is marked on the cake, trace the lines again with Super Black frosting and the #2 piping tip.
4. When you have finished the outline, paint your frosting with the required colors and fill in the areas with the #14 piping tip.

This cake looks so spooky that we had to put the word on it and yet it is so tasty! Look at its bats made with Fondant and the meringue covers, painted with Super Black and Neon Purple. Is this the cake you want to make? Then better watch the full video right here.

This Magic Cauldron Cake is a bit tricky. First, we covered our bread with meringue painted with Super Black. Did you know that our Royal Icing mix has 3 different uses? For each one of its consistencies! You see, you can make a Stiff, a Medium and a Flood consistency with our icing mix and each one allows you to make different decorations.
With a stiff consistency, you can make flowers and sprinkles. With a medium one, you can outline and fill your cookies, write on it and make transfers. And with the flood consistency, you can make drip cakes and fill great areas!
This is true! All you have to do to make our Royal Icing is mix 1.1 Lb of it with 5 tbsp or 2.50 fl.oz of water. This will give you THE Stiff consistency and from there, you only need to add more water with a hand sprayer to obtain the other 2 consistencies.
Another secret is that our icing mix dries super quickly! So you just have to wait a bit before adding more royal icing to your cookie or making your sprinkles. Wanna speed up the drying process? You can do it with a dehydrator!

]]>So as you know, our Royal Icing mix can be made in 3 consistencies, Flood, Medium and Stiff. On this occasion, we’ll be using our Stiff consistency. To get it, we’ll need to beat 1.1 lb of Royal Icing with 2.5 oz or 5 tbsp of water for 1-2 minutes. After this, your stiff consistency will be ready. Stay tuned to see our other consistencies in action!
Once you have your stiff consistency, you can paint it in any colors you want. Remember to use more than 1 color to have different kinds of sprinkles. And now, for the final step: Place your icing on a piping bag and make straight lines on wax paper. Then, let them rest and once they are dry, break them. Yes, break them!

]]>Glad you stayed! First we’ll need to make one Enco meringue bowl. And for all our new cousins, here’s the recipe:
First we beat at full speed 6-8 oz of water with 2.3 oz or 6 tbsp of our Meringue Powder. Once it reaches stiff peaks, turn off the mixer and add your syrup. Be careful not to overbeat it. How do we prepare the syrup? Easy! Heat at high temperature 1 ¾ cups or 14 oz of granulated sugar with 5 oz of water. Once it starts boiling, count 2 minutes and turn off.
Turn your mixer again and mix while you add your hot syrup immediately after you turn the stove off. After that, mix until you get the desired consistency. Not that hard, ah? And wait until you find out how to make meringue cookies.
Here it goes: Paint your meringue with your favorite Enco gel food colors, make your favorite figures on a tray with wax paper and take it to the oven for 1 hour 10 minutes at 230ºF.

Place some film paper across your table. Make sure it's well spread. Then, begin placing straight lines with your meringue painted with your favorite Enco gel food colors.
Cover your meringue lines with the film paper. Then leave a corner open so the mixture can come out from the piping bag.
Pick the tip you want to use and place it in your piping bag. Then put inside the bag the meringue lines covered in the film paper.
