First we beat at full speed 6-8 oz of water with 2.3 oz or 6 tbsp of our Meringue Powder. Once it reaches stiff peaks, turn off the mixer and add your syrup. Be careful not to overbeat it. How do we prepare the syrup? Easy! Heat at high temperature 1 ¾ cups or 14 oz of granulated sugar with 5 oz of water. Once it starts boiling, count 2 minutes and turn off.
Turn your mixer again and mix while you add your hot syrup immediately after you turn the stove off. After that, mix until you get the desired consistency. Not that hard, ah? And wait until you find out how to make meringue cookies.
Here it goes: Paint your meringue with your favorite Enco gel food colors, make your favorite figures on a tray with wax paper and take it to the oven for 1 hour 10 minutes at 230ºF.
